Jonathan Hope and Slow Sauce, Banchory, Win £10,000 from Scottish Edge

That the Parliament congratulates, Jonathan Hope and Slow Sauce, from Banchory, on winning £10,000 from Scottish Edge; notes that Scottish Edge is a funding competition aimed at identifying and supporting Scotland’s innovative, high-growth potential, entrepreneurial talent; understands that Jonathan, a former London chef, has launched Slow Sauce and will make miso and shoyu (soy sauce) using organic, locally sourced ingredients, and mature it in old whisky barrels; notes that, while the Japanese use rice or barley when making miso, Jonathan will be growing it on oats, and plans to sell five tonnes in the first year, eventually selling miso to the Japanese and soy sauce to the Chinese, and wishes him every success for his business in the future.
